Through his knowledge of the bakery and pastry making profession, Thierry Antoine was able to experiment, test, taste and finally find the perfect dosage of bergamot extract to give his butter brioche such a special taste.
This creation, with a local flavour, completes the wide range of breads, pâtés lorrains (another local product), pastries and other sweet delicacies in the windows of the Boulangerie "Au pain qui chante" at the end of the week. Bergamot brioche can also be made to order.
All the breads in this Bakery are made from wheat flour from the Moulin de Savigny in the Vosges.
