Bastion will champion small-scale farming with local and seasonal produce, a refined cuisine highlighting vegetables, and heritage breeds of animals. Combating waste will be central: everything will be used to minimize waste. The name Bastion reflects their commitment to cuisine that respects the land and all living things, while also paying homage to the urban history of Boulevard du 26e RI.
